The blood serum level of various lipids, whether fats or cholesterol, makes no difference.
It is the fat actually still sitting in the stomach that is the barrier. It's similar to the old drinker's trick of coating one's stomach with fat by downing a gulp or two of olive oil in order to win a drinking contest... the oil coating slows the absorption of the alcohol into the blood.
The difference is that with alcohol, the fat coating is a delaying tactic only. The alcohol will all eventually be absorbed, fat or no fat, since it is a simple and stable molecule that is only broken down by the liver over time. But psilocybin is a more complex and fragile molecule. Prolonged exposure to digestive acids will break it down before it can even be absorbed. This is why you want it to be absorbed from the stomach as rapidly as possible. The best way to ensure rapid absorption is to make sure the stomach is completely empty at time of ingestion, and ESPECIALLY sure that there is no fat in the stomach.
